Two BC women pioneering female distillation have created an exquisite whiskey for this year’s BC Distilled PADS Fundraiser. We are talking about True North Distilleries, one of the five local craft distillers to participate in this year’s charitable event. Partial proceeds will go towards PADS, supporting a great organization during a tumultuous time. Summit Labels was inspired to join this distillery in contributing to a great cause and has since produced and covered 100% of all label costs associated with the initiative.

A Little Bit of Background

True North Distilleries is BC’s very first female-owned and operated craft distillery, located in Grand Forks. Talk about girl power! The distillery tailors its spirits towards the female palate, which is a market often overlooked in the distilled liquor space. The owners are major foodies with a love of chemistry and flavour. They make small batch organic liquor using a very hands-on approach. Everything is done by hand, including the labelling of the bottles. They omit sulphites and preservatives from their products and source locally grown organic produce to create their artisanal products.

 

The Star of the Show

The distillery’s contribution to the fundraiser comes in the form of a delicious tasting highland-style whiskey. The carefully crafted limited-release spirit is called Persephone. It is named after the Greek goddess of the underworld and has a pleasant, smooth taste that’s easy on the palate. The drink was peated during the mash and used a native BC tray for smoking, giving each sip a subtle maple taste. All colour has been drawn out from the oaking with a filter, delivering a clear liquid. However, don’t be fooled. It might be lacking colour, but it definitely isn’t lacking any flavour.
